My own pickled onion recipe

This will fill one of those big IKEA jars. You need:

  • 1kg pickling onions
  • 1 litre of vinegar (some people only use malt vinegar but I love throwing together anything that is in the cupboard—try to include some malt, red wine, and balsamic vinegars but anything will do!)
  • 150g sugar
  • pinch of coriander seeds, mustard seed, and black peppercorns
  • bay leaf
  • a couple of dried chillies, whole (for aesthetic reasons!)
  • a few cloves (not too many because they can really overpower everything)

Trim both ends of the onions and cover them in boiling water to make them easier to peel later. Meanwhile put the vinegar, sugar, and spices into a pan—heat and stir until the sugar has dissolved. When the onions have cooled down peel them and put them in a jar. Cover with the vinegar liquid. Seal. Put somewhere dark and cool for two months.

    made a rather simpler version con sliced onions este summer but was also not bad
